Chicken tortilla soup is one of my favorites. You can make this soup as a side dish, starter, or main course paired with a Caesar salad, and biscuits. You can customize it so many ways. The tortilla chips can be omitted to make it lower in carbs/ paleo. You can add corn for extra carbs, or just a little different flavor. So many ways to change up or adjust this chicken tortilla soup to your personal palate!

Fast or slow chicken tortilla soup
There are many ways to save time with this soup. You can make everything from scratch. Or you can buy things already premade. As a mom of five I usually opt for some premade options. You can make your own stock ahead of time, or purchase a high quality premade stock. You can make your own fajita seasoning super quick, recipe link here. Or once again you can also buy premade seasoning packages. You can fry the tortilla chips fresh, or you can buy a bag of tortilla chips to use. So if you only have an hour to get dinner on the table this is the soup for you. If you have all day, this is still the soup for you!

Why make your own seasoning
When starting on my health journey I soon realized that healthy premade seasonings are hard to come by. Most premade seasonings will have unnecessary added ingredients. A few common ones are monosodium glutamate or MSG. MSG is a flavor enhancer that is believed to contribute to obesity, and other metabolic disorders. It also has some neurotoxic effects, and can effect reproductive organs. Another common additive is maltodextrin. Maltodextrin is a type of carb. This carb is known to cause digestive issues by altering gut bacteria. The last very common one I’ll mention is food dyes. Food dyes are greatly related to mood disorders. This is especially toxic for children. Often removing sugar and dyes from a Childs diet will reduce ADHD symptom’s.

Chicken Broth
I am an advocate for making as much food from scratch as you can, but life is busy and this isn’t always possible. There are several brands of premade stock that are good quality. My favorite brand is Fire & Kettle, but its harder to find. Just read the ingredient list and opt for one without MSG, or food dyes. Usually the less ingredients on the label the better!
Chicken Tortilla Soup
Delicous chicken tortilla soup
Ingredients
- 3 pounds chicken breast
- 2 tablespoons avocado oil
- 3 teaspoons fajita seasoning or more to taste
- 1 large onion diced
- 2-4 jalapenos diced seeds removed (depending on preferred spice level)
- 6 cloves of garlic minced or pressed
- 2 quarts chicken stock
- 1 (28 ounce) can crushed fire roasted tomatoes
- Juice of two limes
- 1 cup cilantro chopped (or more to taste)
- grated cheddar cheese
- Avocado cubed
- Fresh cilantro for garnish (optional)
- Crispy fried tortilla strips or tortilla chips
Instructions
- Boil chicken breast in a large pot of water until cooked, 20-30 minutes or until a thermometer inserted in the center reads 165F. Shred chicken with two forks, or alternatively shred in a large bowl using an electric mixer.
- Meanwhile, heat a large pot over medium heat. Heat 2 tablespoons oil. Once hot add the onions, sauté until the onions become soft approximately 4-6 minutes. Add the jalapenos and continue sauteing another minute. Next add the garlic and sauté another 30 seconds or until fragrant.
- Pour in the chicken stock, fire roasted tomatoes and fajita seasoning. Bring to a medium boil.
- Add in shredded chicken breast, cilantro, and lime juice. Adjust seasoning as needed.
- Fry tortilla strips in hot oil until golden and crispy. Or serve with tortilla chips.
- Serve with avocado, cheese, cilantro and crispy tortillas.
Notes
Shredding chicken with an electric mixer saves time but can be a little messy, make sure to use a deep dish bowl.
Taste test the soup and add more seasoning as needed.
Store soup in a airtight container in the fridge for up to 5 days. Or you can freeze soup for up to 4 months.
