A delicately seasoned cod is drizzled in golden brown butter. This is a super simple quick meal, and yet so impressive to the eyes, and the taste buds!

A little bit about brown butter cod
This recipe is so simple and easy. The cod is first patted dry with paper towel, then it’s brushed or drizzled with olive oil before the seasoning is sprinkled on top. Drying the cod well is very important if using frozen fish, if it’s not dried off first then the moisture all comes out in the baking and it becomes soggy.

You can drizzle the olive oil on or use a basting brush as well. You could also make a paste with the seasonings and the olive oil if you prefer. I’m usually in a hurry and opt to drizzle, then sprinkle on the seasoning with no measurements like a mad woman.

When making the brown butter do not walk away from the stove! The difference between a nice golden brown, or a burned black is only a few seconds. As you make the butter it will become foamy, shortly after the foaming you will notice the change in color. You will also notice a residue on the bottom of the pot this is a sign it’s almost ready. Once the foaming decreases slightly, and its a nice golden color, and develops a deep aroma then its ready. I like to have extra for dipping!

After the cod is baked and the butter is drizzled over it then you can save any left over butter to dip the cod in. This brown butter is so good, we always need extra on the table for everyone!

Such a simple recipe and yet so impressive to the eyes! It looks like a gourmet meal that took hours to prepare. In 30 minutes or less you can have this delicious dinner prepped, cooked, and served!
Brown Butter Cod
Delicately seasoned Cod drizzled in brown butter
Ingredients
- 700g Cod fillets
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tsp paprika
- 1/2 tbsp chopped fresh parsley
- Olive oil
- 1/2 cup butter
Instructions
- Preheat oven to 350F
- Cover a large baking sheet with parchment paper and set aside.
- Mix salt, pepper, and paprika together in a bowl.
- Place the fillets on a paper towel and pat dry. Place on baking tray.
- Drizzle or brush with a little olive oil.
- Sprinkle seasoning evenly over all the fillets.
- Sprinkle on the chopped parsley.
- Bake for 15 to 20 minutes or until an instant read thermometer reads 145F at the thickest part on the fish.
- While the cod is baking you can begin to brown the butter.
- Over medium heat melt butter in a heavy bottomed pot.
- Stir constantly, the butter will begin to foam quite a bit. After a little while you will notice the foam go down slightly this means it's almost done. Keep stirring and watching closely, once it turns golden, and there is a little residue on the bottom when you stir then its done. You will also notice the aroma of the butter will change slightly.
- Once the cod is done transfer to a plate and drizzle 2 tbsp of the brown butter over top. Serve the rest of the browned butter on the side for anyone who would like extra.

Store left overs in an airtight container in the fridge for 3-4 days.
