This simple and classic chili recipe is super flavorful and makes the perfect weeknight dinner!

Tips for making this chili
The first time I made this chili I really questioned the seasoning amount. The seasoning does look and sound like a lot, but if you trust the process it will be delicious in the end. I also don’t love giant chunks of tomato so I use a potato masher to break them up after a little bit of boiling. Fresh garlic can be substituted for 1 tablespoon garlic powder.

Veggies
In our house we don’t love onions and we think half is plenty. If you love onions you could easily increase that to a whole. Also for a stronger onion flavor opt for a white onion. When it comes to mushrooms I usually cut them into quarters, adjust the size according to your preference.

Beans
Red kidney beans are super delicious in this recipe. They don’t easily get mushy, and add a great texture and flavor. If you don’t have red kidney beans you can substitute them for another bean like pinto or black. But the result won’t be quite as good.

Chili
Simple classic chili
Ingredients
- 1 pound lean ground beef
- 1 tbsp olive oil
- 1/2 sweet onion chopped
- 4 cloves garlic minced
- 5 white button mushrooms chopped
- 2 1/2 tbsp chili powder
- 2 tbsp ground cumin
- 1 1/2 tsp salt
- 1/2 tsp pepper
- 2 tbsp tomato paste
- 1 540ml can diced tomatoes
- 1 540ml can red kidney beans (drained and rinsed)
- 1 8oz can tomato sauce
- 1 1/2 cups beef broth
Instructions
- Heat a large pot over medium heat with olive oil.
- Once hot add onion and sauté 5 minutes.
- Then add garlic and sauté another 30 seconds or until fragrant.
- Then add ground beef and cook it. Breaking it up into small pieces as you brown it approximately 10 minutes.
- Once beef is browned add in diced tomatoes with juice, chili powder, cumin, salt, pepper and beef broth. Bring to a boil reduce heat and simmer with lid on for 10-15 minutes until tomatoes are soft.
- Once tomatoes are nice and soft use a potato masher to gently break apart the tomatoes, you can skip this step if you prefer the big chunks.
- Then add in tomato paste and tomato sauce.
- Next add in the drained red kidney beans and chopped mushrooms. Cook another 8-10 minutes with the lid on.
- Adjust seasonings as needed.
- Serve and enjoy.
