This stew is tender and full of flavor. Browned cubes of beef are cooked up with delicious spices and veggies. A must try recipe!

Beef Stew
I love utilizing a pressure cooker to make beef super tender. I don’t like when beef is chewy. By first cooking the beef for a little bit before adding the veggies, you end up with nice soft beef, while not overcooking your vegetables.
Browning the beef at the beginning is important. Browning beef adds a depth of flavor that can not be achieved any other way!
The seasonings in this recipe complement the beef so well. The sauce is thickened at the end making a perfect mouth watering chunky stew that pairs so well with crackers!

Vegetables for beef stew
This recipe calls for onions, carrots, potatoes, and garlic. I like to cut my onions really fine (we don’t love to much onion flavor) and I like to use my trusty tupperware chopper for garlic. While the potatoes I prefer chopped to approximately 1/2 in cubes. The carrots I usually cut in half lengthwise and then slice. If the carrots are very thick then Ill sometimes cut them into quarters. You just want everything a nice size so you can get a little bit of everything on one spoon.

Simple ingredients
This stew is made with simple ingredients. Beef broth, Worcestershire sauce, Italian seasoning and salt and pepper give this a delicious, deep flavor! Simple and yet bold. Not overpowering, just the perfect balance of meat, veggies, and flavor!

Now get to cooking
This stew looks complicated but its actually very simple and easy. It takes a little longer then a lot of recipes, but that’s mostly cook time on the stove where you can still be off doing other things. So in the end this delicious dinner feels like it took no time at all. Now its just time to get to cooking!
Beef Stew
Itialian seasoned beef stew
Ingredients
- 2lbs stew meat
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp pepper
- 1 tsp Italian seasoning
- 2 tbsp Worcestershire sauce
- 3 cloves garlic minced
- 1/2 sweet onion diced
- 2 medium size carrots sliced
- 2 medium size potatoes cubed
- 1 liter beef broth
- 1 10 oz can tomato sauce
- 1 tbsp corn starch
- 1/4 cup cold water
Instructions
- Heat your pressure cooker under medium heat. Add 2 cups beef broth, 1 tbsp Italian seasoning, and 2 tbsp Worcestershire sauce.
- Season the beef with salt and pepper.
- Then heat a cast iron skillet under medium to high heat. Once pan is hot add oil and brown the stew meat in batches. You want the meat nice and browned as this adds so much flavor. Add the browned beef to the pressure cooker.
- Once the last batch is done then lower the heat under the pan to medium and sauté the onions until soft, about 5 minutes. Then add the garlic and continue sauteing another 30 seconds.
- Then pour in the rest of the beef broth, use a wooden spoon to gently scrape off any brown bits off the bottom of the pan. Pour into the pressure cooker.
- Seal pressure cooker and bring to high pressure. Cook for 20 minutes then quick release.
- Once the pressure has been released add in the carrots, potatoes, and tomato sauce cook under high pressure for another 15 minutes. Then quick release again.
- Check to make sure beef is nice and tender and adjust any seasonings as needed.
- Lastly add the 1 tbsp corn starch to 1/4 cup cold water. Slowly stir this into the stew to thicken the sauce.
- Serve with crackers and enjoy!
Notes
For small beef cubes 15 minutes cook time before adding the vegetables would be enough.
Store left overs in an airtight container in the fridge for up to 5 days. Reheat in a pot on the stove stirring frequently.
